Curried Coconut Red Lentil Soup with Spinach

1 medium yellow onion, diced somewhat fine
1 1/2 c. red lentils, rinsed
1 1/2 c. small red potatoes, diced to about 1/2 inch
1 - 2 T. curry paste
3 cups vegetable stock or water
1 cup coconut milk
2 cups spinach leaves, sliced into thin ribbons
Juice of 1 lime
Heat a couple splashes of olive or canola oil in a soup pot. Add the onions with a couple pinches of salt and cook, stirring frequently, for about 10-15 minutes, until the onions soften and turn a light golden brown. Stir in 1 T. of curry paste and add the lentils and the stock or water. Bring to a boil and then turn the heat down and simmer, partially covered, for 8 minutes. Add the potatoes and the coconut milk, and simmer for another 8 minutes. Stir in the spinach and cook for another 5 minutes or so. Stir in the lime juice, taste it and add more salt if necessary, and add more curry paste if you'd like.

I can only say: Yum-o.
I can't believe you "whip up" soup before going to work! I don't even work and I wouldn't attempt to whip up something like this. On the other hand, it looks soooooooooooooo delicous. Lentil soup is my absolute favorite. This really does look good.
You are just so multi-talented.
Fortunately, this one was easy to whip up. And I get cranky at work if I don't have something good to eat, so partially I do it as a service to my co-workers :)
